Preheat the oven to 350°F (175°C). Grease a baking dish.

In a bowl, whisk together the flour, baking powder, and salt.

In another bowl, mix the melted butter and brown sugar until well combined.

Add the egg, vanilla extract, and ground ginger to the butter mixture and mix well.

Gradually add the flour mixture to the wet ingredients and stir until just combined.

Fold in the shredded coconut.

Pour the batter into the greased baking dish and spread it evenly.

Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
