Preheat the oven to 350°F (175°C). Line a muffin pan with cupcake liners.

In a bowl, whisk together the all-purpose flour, baking powder, and salt.

In a separate large bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the coconut milk and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the shredded coconut.

Divide the batter evenly among the cupcake liners. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

While the cupcakes are cooling, prepare the pomegranate frosting. In a small bowl, whisk together the pomegranate juice and powdered sugar until smooth.

Once the cupcakes have cooled, frost them with the pomegranate frosting. Garnish with pomegranate seeds.
