Preheat the oven to 325°F (160°C). Crush the ginger cookies and mix with melted butter. Press the mixture into the bottom of 4 individual serving cups. In a mixing bowl, beat cream cheese, sugar, vanilla extract, and lemon zest. Add eggs one at a time, mixing well after each addition. Mix cornstarch with ground ginger and fold into the cream cheese mixture. Pour the mixture over the cookie crust in each cup. Cut the pears into thin slices and arrange them on top of the cream cheese mixture. Bake for 25 minutes or until the cheesecakes are set. Let them cool at room temperature for about 2 hours. Refrigerate for at least 2 hours before serving. Serve chilled with a dollop of whipped cream on top.
