Caramels were originally made with honey and date syrup in ancient Persia.

  2. Cook over medium heat, stirring constantly, until the mixture reaches 248°F (120°C) on a candy thermometer.
  3. Remove from heat and stir in the vanilla extract.
  4. Pour the mixture into a greased baking dish and let it cool for about 1 hour.
  5. Cut into small squares and wrap each caramel in wax paper.
  6. Store in an airtight container.
