  1. In a large bowl, mix together flour, sugar, butter, eggs, vanilla extract, baking powder, and salt until a dough forms.
  2. Divide the dough into two equal parts and wrap each in plastic wrap. Chill in the refrigerator for 30 minutes.
  3. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  4. Roll out one portion of the dough on a lightly floured surface to about 1/8 inch thickness.
  5. Use a round cookie cutter or glass to cut out circles from the dough.
  6. Place a teaspoon of fruit preserves in the center of each circle.
  7. Fold the edges of the circle towards the center, forming a triangle shape with the filling exposed. Pinch the corners to seal.
  8. Repeat steps 4-7 with the remaining dough and filling.
  9. Place the filled triangles on the prepared baking sheet and bake for 12-15 minutes, or until golden brown.
