Preheat the oven to 325°F (160°C).

In a mixing bowl, combine the pastry crust ingredients and press the mixture into the bottom of a greased springform pan.

In a separate bowl, beat the cream cheese until smooth. Add sugar, sour cream, eggs, vanilla extract, lemon zest, and cornstarch. Mix well.

Pour the cream cheese mixture over the prepared crust.

Bake in the preheated oven for 60 minutes or until the center is set.

Turn off the oven and let the cheesecake rest in the oven for 2 hours.

Remove from the oven and let it cool completely.

Refrigerate for at least 4 hours or overnight.

Serve chilled with fresh berries on top.
