Zucchini bread became popular in the United States during the 1960s when home gardeners were looking for creative ways to use up their abundant zucchini harvest.

Preheat the oven to 350°F (175°C). Grease a loaf pan.

Grate the zucchini and squeeze out excess moisture.

In a large bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

In a separate bowl, beat the eggs, sugar, vegetable oil, orange zest, and orange juice.

Gradually add the wet ingredients to the dry ingredients, mixing well.

Fold in the grated zucchini, cranberries, and chopped walnuts.

Pour the batter into the greased loaf pan.

Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool in the pan for 10 minutes.
