  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and ground cinnamon.
  3. In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. In a small saucepan, melt the unsalted butter. Brush the melted butter over the tops of the muffins.
  7. Sprinkle cinnamon sugar over the muffins.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
