  1. In a large bowl, combine flour, sugar, yeast, salt, cinnamon, and raisins. Add warm water gradually and mix until the dough comes together. Knead the dough on a lightly floured surface for about 5 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until it doubles in size. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper. In a large pot, bring the boiling water and baking soda to a boil. Divide the dough into 6 equal pieces and roll each piece into a long rope. Shape each rope into a pretzel shape and dip it into the boiling water for about 30 seconds. Remove the pretzels from the water using a slotted spoon and place them on the prepared baking sheet. Sprinkle the pretzels with coarse salt. Bake for about 12-15 minutes or until the pretzels are golden brown. Remove from the oven and let them cool for a few minutes before serving.
