Cinnamon-Raisin Cream Scones
Scones originated in Scotland and are traditionally served with clotted cream and jam.

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.

Cut the cold butter into small pieces and add it to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

Stir in the raisins.

In a separate bowl, whisk together the heavy cream, vanilla extract, and egg.

Pour the cream mixture into the flour mixture and stir until just combined.

Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together.

Pat the dough into a circle about 1 inch (5 cm) thick. Use a sharp knife to cut the circle into 8 wedges.

Place the scones onto the prepared baking sheet and brush the tops with a little extra cream.

Bake for 12-15 minutes, or until the scones are golden brown.

Remove from the oven and let the scones cool on a wire rack for 10 minutes before serving.
