In a saucepan, whisk together the cocoa powder, instant coffee granules, and low carb sweetener.

Add the heavy cream and almond milk to the saucepan and heat over medium heat until hot but not boiling.

In a separate bowl, whisk the egg yolks, vanilla extract, and salt.

Slowly pour the hot cream mixture into the egg yolks, whisking constantly.

Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until thickened.

Remove from heat and stir in the dark chocolate until melted.

Pour the pudding into serving dishes and refrigerate for at least 2 hours to set.
