Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.

In a separate bowl, whisk together the all-purpose flour, ground cinnamon, baking soda, and salt. Gradually add the dry ingredients to the butter mixture and mix until well combined.

Stir in the graham cracker crumbs, rolled oats, raisins, and chopped walnuts.

Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of a spoon.

Bake for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
