  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut the cold butter into small cubes and add it to the bowl. Use your fingers or a pastry cutter to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. Stir in the cinnamon chips.
  5. In a separate bowl, whisk together the egg, milk, and vanilla extract.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined.
  7. Transfer the dough onto a lightly floured surface and gently knead it a few times to bring it together.
  8. Pat the dough into a circle about 1 inch (5 cm) thick.
  9. Cut the circle into 8 wedges and place them on the prepared baking sheet.
  10. Bake for 12-15 minutes, or until the scones are golden brown.
