Chunky Monkey Cupcakes
Chunky Monkey is a flavor of ice cream made with bananas, fudge chunks, and walnuts. These cupcakes are inspired by that delicious combination!

Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.

In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.

In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the mashed bananas.

Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Stir in the vanilla extract.

Fold in the chocolate chips and chopped walnuts.

Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

Remove from the oven and let the cupcakes cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.

Once cooled, frost the cupcakes with your favorite frosting, if desired.
