  1. In a medium bowl, combine the all-purpose flour and salt. Cut in the unsalted butter and cream cheese until the mixture resembles coarse crumbs. Shape into a ball, cover, and refrigerate for 1 hour.
  2. Preheat the oven to 350°F (175°C).
  3. In a separate bowl, beat the egg, granulated sugar, and vanilla extract until light and fluffy. Stir in the cranberries and chopped pecans.
  4. Roll out the dough to 1/8-inch (3mm) thickness. Cut into 2 3/4-inch (7cm) circles and press into mini muffin tins. Spoon the cranberry-nut mixture into the tins.
  5. Bake for 25 minutes or until the crust is golden brown. Allow to cool in the tins for 10 minutes, then transfer to a wire rack to cool completely.
