  1. Preheat the oven to 325°F (163°C). Crush the chocolate cookies in a food processor and mix with melted butter. Press the mixture into the bottom of a greased springform pan.
  2. In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition. Stir in the sour cream and flour.
  3. Pour the cream cheese mixture over the crust in the springform pan. Bake for 60 minutes or until the center is set.
  4. Remove the cheesecake from the oven and let it cool in the pan for 10 minutes. Then, run a knife around the edge of the pan to loosen the cheesecake. Allow it to cool completely.
  5. In a small saucepan, heat the heavy cream until it begins to simmer. Remove from heat and add the semi-sweet chocolate. Stir until smooth. Let the ganache cool for 10 minutes.
  6. Pour the ganache over the cooled cheesecake, spreading it evenly. Refrigerate for at least 2 hours.
  7. Before serving, sprinkle powdered sugar on top. Enjoy!
