Chocolate Roulade with Coffee Cream

Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.

Melt the dark chocolate in a heatproof bowl set over a pan of simmering water.

In a separate bowl, whisk the eggs and granulated sugar together until thick and pale.

Fold in the melted chocolate and cocoa powder.

Pour the mixture onto the prepared baking tray and spread it evenly.

Bake for 12-15 minutes until the top is firm to touch.

Meanwhile, prepare the coffee cream by dissolving the instant coffee in boiling water.

In a separate bowl, beat the mascarpone cheese, icing sugar, and vanilla extract until smooth.

Gradually add the coffee mixture to the mascarpone mixture, whisking continuously.

Once the chocolate roulade is cooked, remove it from the oven and let it cool for a few minutes.

Carefully transfer the roulade onto a clean tea towel.

Spread the coffee cream evenly over the roulade.

Roll up the roulade tightly using the tea towel to help.

Place the rolled roulade on a serving plate and refrigerate for at least 1 hour.

Before serving, dust the roulade with cocoa powder and garnish with chocolate curls.
