  1. Preheat the oven to 325°F (163°C).
  2. Crush the chocolate cookies and mix them with melted butter. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add sour cream and mix well. Add eggs one at a time, beating well after each addition.
  4. Melt the semi-sweet chocolate and heavy cream in a microwave-safe bowl. Stir until smooth. Pour the chocolate mixture into the cream cheese mixture and stir until well combined.
  5. Pour the batter over the crust in the springform pan. Smooth the top with a spatula.
  6. Bake for 55-60 minutes or until the center is set and the top is lightly browned. Turn off the oven and leave the cheesecake inside for 1 hour.
  7. Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 2 hours or overnight.
  8. Serve chilled and enjoy!
