Preheat the oven to 350°F (175°C).

Prepare the pie crust according to the package instructions and bake it in the preheated oven for 10 minutes.

In a saucepan, melt the semi-sweet chocolate over low heat, stirring constantly.

In a separate saucepan, combine the coconut milk, granulated sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.

Remove the coconut mixture from the heat and stir in the melted chocolate and coconut extract.

Pour the mixture into the pre-baked pie crust and refrigerate for 2 hours, or until set.
