Chocolate Guinness Cupcakes

Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.

In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.

In a large bowl, cream together the butter and granulated sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients to the butter mixture, alternating with the Guinness beer. Fold in the sour cream.

Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the tin for 10 minutes, then transfer them to a wire rack to cool completely.

In a small saucepan, heat the heavy cream until it begins to simmer. Remove from heat and add the chocolate. Let it sit for 2 minutes, then whisk until smooth. Allow the ganache to cool slightly.
