  2. Sift the almond flour mixture into a large bowl.
  3. In a separate bowl, beat the egg whites until foamy. Gradually add the granulated sugar and continue to beat until stiff peaks form.
  4. Fold the sifted almond flour mixture into the egg white mixture until well incorporated.
  5. Divide the mixture in half. In one half, fold in the cocoa powder. In the other half, fold in the Earl Grey tea leaves.
  6. Transfer each mixture to separate piping bags fitted with a round tip.
  7. Pipe small rounds onto a baking sheet lined with parchment paper.
  8. Allow the piped macarons to rest for 30 minutes.
  9. Preheat the oven to 300°F (150°C).
  10. Bake the macarons for 15-20 minutes.
  11. Let the macarons cool completely on the baking sheet.
  12. In a microwave-safe bowl, melt the semi-sweet chocolate.
  13. In a small saucepan, heat the heavy cream until just simmering. Remove from heat and add the melted chocolate, butter, and vanilla extract. Stir until smooth.
  14. Allow the ganache to cool until thickened.
  15. Sandwich the macarons together, using the ganache as filling.
