Instructions
-
Preheat the oven to 180°C (350°F). Grease and line a round cake tin.
-
Melt the chocolate and butter in a heatproof bowl over a saucepan of simmering water. Stir until smooth and set aside to cool slightly.
-
In a large bowl, whisk together the chestnut puree, eggs, and sugar until well combined. Gradually add the melted chocolate mixture, flour, and baking powder. Mix until smooth.
-
Pour the batter into the prepared cake tin and smooth the top. Bake for 40 minutes or until a skewer inserted into the center comes out clean.
-
While the torte is baking, prepare the chocolate cognac mousse. In a separate bowl, whisk the whipping cream, powdered sugar, and vanilla extract until soft peaks form. Fold in the cognac.
-
Once the torte is baked, remove it from the oven and let it cool in the tin for 10 minutes. Then transfer it to a wire rack to cool completely.
-
Once the torte is cooled, slice it in half horizontally. Spread a layer of the chocolate cognac mousse on the bottom half and place the top half back on.
-
Serve the chocolate chestnut torte with the remaining chocolate cognac mousse on the side.
-
Enjoy!
