Chocolate and Hazelnut Linzer Cookies
Linzer cookies are named after the Austrian city of Linz, where they originated in the 17th century. They are traditionally made with a nutty dough and filled with jam, with the cut-out center allowing the vibrant jam to peek through.

In a bowl, whisk together the all-purpose flour and ground hazelnuts.

In a separate bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy.

Add the egg yolk, vanilla extract, and salt to the butter mixture. Mix well.

Gradually add the flour mixture to the wet ingredients, mixing until a dough forms.

Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Roll out one disk of dough on a lightly floured surface to about 1/8-inch thickness.

Using a round cookie cutter, cut out circles from the rolled dough and transfer them to the prepared baking sheet.

Repeat with the remaining dough, rerolling scraps as needed.

Using a smaller cookie cutter, cut out the centers of half of the circles.

Bake the cookies for 10-12 minutes, or until lightly golden.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Spread a teaspoon of raspberry jam on the solid cookies.

Place the cookies with the cut-out centers on top of the jam-covered cookies.

Drizzle melted dark chocolate over the cookies.

Allow the chocolate to set before serving.

Dust the cookies with powdered sugar before serving, if desired.
