  1. Preheat the oven to 190°C (375°F).
  2. Roll out one pie crust and place it in a pie dish.
  3. In a bowl, combine cherries, sugar, cornstarch, lemon juice, vanilla extract, and salt. Mix well.
  4. Pour the cherry mixture into the pie crust.
  5. Dot the top of the cherries with butter.
  6. Roll out the second pie crust and place it over the cherry filling. Trim and crimp the edges.
  7. Cut slits in the top crust to allow steam to escape.
  8. In a small bowl, beat the egg with milk to make an egg wash.
  9. Brush the top crust with the egg wash.
  10. Bake the pie for 45 minutes, or until the crust is golden brown and the filling is bubbly.
  11. Remove the pie from the oven and let it cool for at least 2 hours before serving.
  12. Dust with powdered sugar before serving.
