Boil the potatoes until tender. Mash them and set aside.

Heat oil in a pan and sauté the spinach until wilted. Remove from heat.

In a bowl, mix together the mashed potatoes, sautéed spinach, cheese, chili powder, cumin powder, and salt.

Take a spring roll wrapper and place a spoonful of the potato mixture in the center. Fold in the sides and roll tightly.
