Cheesy Scalloped Potatoes and Carrots
Scalloped potatoes originated in France and were traditionally made with thinly sliced potatoes layered with cream or milk. The addition of carrots and cheese is a variation commonly found in American cuisine.

Preheat the oven to 375°F (190°C).

Peel and thinly slice the potatoes and carrots.

In a saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic, and cook until softened.

Stir in the flour until well combined. Gradually add the milk while stirring continuously, until the mixture thickens.

Remove the saucepan from heat and stir in the shredded cheddar cheese until melted. Season with salt and black pepper.

In a greased baking dish, layer half of the sliced potatoes and carrots. Pour half of the cheese sauce over the vegetables. Repeat with the remaining vegetables and cheese sauce.

Cover the baking dish with foil and bake for 45 minutes.

Remove the foil and bake for an additional 15 minutes, or until the top is golden brown and the vegetables are tender.
