Preheat the oven to 375°F (190°C).

Rinse the quinoa under cold water.

In a saucepan, bring the vegetable broth to a boil.

Add the quinoa, cover, and simmer for 15 minutes.

In a separate pan, sauté the onion and garlic until translucent.

Add the broccoli florets and cook for another 5 minutes.

In a large bowl, combine the cooked quinoa, sautéed vegetables, cheddar cheese, milk, eggs, salt, and pepper.

Transfer the mixture to a greased casserole dish.
