Cheesy Baked Beans in Baked Potatoes

Preheat the oven to 375°F (190°C).

Wash and scrub the potatoes, then prick them all over with a fork.

Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender.

In the meantime, heat the baked beans in a saucepan over medium heat until hot.

Once the potatoes are done, remove them from the oven and let them cool slightly.

Cut the baked potatoes in half lengthwise and scoop out some of the flesh from each half.

Mix the scooped potato flesh with the hot baked beans, cheddar cheese, sour cream, chopped green onions, salt, and black pepper.

Spoon the mixture back into the potato skins.

Place the filled potato skins onto a baking sheet and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
