Preheat the oven to 325°F (163°C).

In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.

In a large bowl, beat the cream cheese and granulated sugar until smooth. Add the sour cream, eggs, and vanilla extract, and continue beating until well combined.

Stir in the mashed sweet potatoes until evenly incorporated.

Pour the cream cheese mixture over the crust in the springform pan.

In a separate bowl, toss the sliced apples with brown sugar, cinnamon, and nutmeg. Arrange the apple slices on top of the cream cheese mixture in the pan.

Bake for 55-60 minutes, or until the center is set.

Remove from the oven and let cool in the pan for 10 minutes.

Run a knife around the edges of the pan to loosen the cheesecake, then remove the sides of the springform pan.

Allow the cheesecake to cool completely, then refrigerate for at least 2 hours before serving.
