  1. Preheat the oven to 400°F (200°C).
  2. Cut off the ends of the Brussels sprouts and remove any outer leaves.
  3. Bring a pot of salted water to a boil and blanch the Brussels sprouts for 3 minutes. Drain and let cool.
  4. Cut a small slit in each Brussels sprout and stuff with a mixture of cream cheese and cheddar cheese.
  5. In a small bowl, mix breadcrumbs, garlic powder, salt, and black pepper.
  6. Roll each stuffed Brussels sprout in the breadcrumb mixture until coated.
  7. Place the stuffed Brussels sprouts on a baking sheet and bake for 20-25 minutes, or until the cheese is melted and the breadcrumbs are golden brown.
  8. Let rest for 5 minutes before serving.
