In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic. Cook until the onion becomes translucent.

Sprinkle the flour over the onion and garlic mixture. Stir well to combine and cook for a minute.

Gradually pour in the chicken or vegetable broth while stirring continuously to avoid lumps.

Add the milk and bring the mixture to a simmer. Cook for 5 minutes, stirring occasionally.

Reduce the heat to low. Stir in the cheddar cheese and Parmesan cheese until melted and smooth.

Season with salt and black pepper to taste.

Remove from heat and let the soup rest for 5 minutes.
