Cheese and Jalapeno Grits Casserole

Preheat the oven to 350°F (175°C).

In a saucepan, bring water to a boil. Stir in the grits and cook for 5 minutes, stirring occasionally.

In another saucepan, heat the milk and butter until the butter is melted.

Gradually stir the milk mixture into the grits. Cook for an additional 5 minutes, until the grits are thickened.

Remove from heat and stir in the grated cheddar cheese, diced jalapeno peppers, salt, and black pepper.

In a separate bowl, beat the eggs and then stir them into the grits mixture.

Pour the mixture into a greased casserole dish.

Bake for 30-35 minutes, until the casserole is set and the top is golden brown.

Let it rest for 10 minutes before serving.
