  2. In a saucepan, heat the heavy cream, whole milk, and chai tea bags over medium heat. Bring to a simmer, then remove from heat and let steep for 10 minutes.
  3. In a mixing bowl, whisk together the granulated sugar and egg yolks until well combined.
  4. Slowly pour the chai-infused cream mixture into the egg yolks, whisking constantly.
  5. Stir in the vanilla extract, ground cinnamon, ground ginger, ground cardamom, and ground cloves.
  6. Strain the mixture through a fine-mesh sieve into a clean bowl.
  7. Divide the mixture evenly among four ramekins or small oven-safe dishes.
  8. Place the ramekins in a baking dish and fill the dish with enough hot water to reach halfway up the sides of the ramekins.
  9. Bake for 25-30 minutes, or until the edges are set but the centers still jiggle slightly.
  10. Remove the ramekins from the water bath and let cool to room temperature.
  11. Refrigerate for at least 2 hours, or until set.
  12. Before serving, top each chai pots de creme with a dollop of whipped cream and a sprinkle of ground cinnamon.
