Grate the carrots and zucchini, then squeeze out the excess moisture using a clean kitchen towel.

In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.

In a separate bowl, beat the eggs, vegetable oil, and vanilla extract together.

Add the grated carrots, zucchini, and walnuts to the wet ingredients and mix well.
