In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the egg and vanilla extract.

In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Stir in the chocolate chips.

Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.

Bake for 10-12 minutes, or until the edges are set.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Once cooled, stack the cookies, alternating with layers of whipped cream and fresh berries.
