Peel and grate the carrots.

In a large bowl, mix the grated carrots, flour, brown sugar, vegetable oil, eggs, baking powder, cinnamon, nutmeg, and salt.

Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
