  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine the graham cracker crumbs and melted butter, then press the mixture into the bottom of a springform pan.
  3. In a mixing bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, sour cream, and flour until well combined.
  4. Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
  5. Bake for 60 minutes or until the center is set and the top is golden brown. Remove from the oven and let it cool in the pan for 10 minutes.
  6. After 10 minutes, carefully run a knife around the edge of the pan to loosen the cheesecake. Allow it to cool completely in the pan.
  7. Chill the cheesecake in the refrigerator for at least 2 hours or overnight.
  8. Once chilled, remove the cheesecake from the pan and garnish with sliced strawberries, whipped cream, and chocolate shavings.
  9. Slice and serve.
