  2. Grate the carrots and zucchini. Squeeze out any excess moisture.
  3. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon powder, and salt.
  4. In a separate bowl, beat the eggs. Add the vegetable oil and vanilla extract. Mix well.
  5. Gradually add the wet ingredients to the dry ingredients. Stir until just combined.
  6. Fold in the grated carrots and zucchini.
  7. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
