Carrots are a great source of beta-carotene, which is converted into vitamin A in the body and is important for good vision.

Preheat the oven to 180°C (350°F) and grease a muffin tin.

In a large bowl, combine the grated carrots, flour, sugar, baking powder, cinnamon, and salt.

In a separate bowl, whisk together the eggs, milk, vegetable oil, honey, and vanilla extract.

Gradually add the wet ingredients to the dry ingredients and mix until just combined.

Spoon the batter into the muffin tin, filling each cup about 3/4 full.

Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the muffins cool in the tin for 5 minutes.

Transfer the muffins to a wire rack to cool completely.
