  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch (23cm) springform pan.
  3. In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition. Stir in the sour cream and flour until just combined.
  4. Pour half of the cream cheese mixture over the crust in the springform pan. Layer half of the sliced apples on top. Drizzle half of the caramel sauce over the apples. Repeat the layers with the remaining cream cheese mixture, apples, and caramel sauce.
  5. Bake for 55-60 minutes, or until the center is set and the top is lightly browned.
  6. Remove the cheesecake from the oven and let it cool in the pan for 10 minutes. Run a knife around the edge of the pan to loosen the cheesecake, then remove the sides of the pan.
  7. Let the cheesecake cool completely, then refrigerate for at least 2 hours or overnight.
  8. Before serving, drizzle additional caramel sauce over the top of the cheesecake and sprinkle with chopped pecans.
