Roll out the puff pastry sheets and cut them into squares.

In a saucepan, melt the butter and sugar over medium heat until it turns into caramel.

Remove from heat and slowly add the heavy cream, stirring constantly.

Stir in the vanilla extract and sea salt.

Place a spoonful of caramel in the center of each puff pastry square.

Fold the corners of the pastry over the caramel and press to seal.
