  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  3. In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition.
  4. Pour half of the cream cheese mixture over the crust in the springform pan. Drizzle half of the caramel sauce over the cream cheese mixture and sprinkle half of the chopped pecans. Repeat the layers with the remaining ingredients.
  5. Bake for 55-60 minutes, or until the center is set and the top is lightly browned. Remove from the oven and let cool in the pan for 10 minutes. Then, run a knife around the edge of the pan to loosen the cheesecake. Remove the sides of the pan and let the cheesecake cool completely.
  6. Once cooled, refrigerate the cheesecake for at least 2 hours, or overnight for best results.
  7. Before serving, garnish with whipped cream, drizzle with caramel sauce, and top with pecan halves.
