Cajun Potato Latkes
Latkes are traditionally associated with Hanukkah, but they can be enjoyed all year round. This Cajun twist adds a spicy kick to the classic potato latkes.

Grate the potatoes and onion using a box grater.

Squeeze out excess moisture from the grated potatoes and onion using a clean kitchen towel.

In a large mixing bowl, combine the grated potatoes, onion, flour, egg, Cajun seasoning, salt, and black pepper. Mix well.

Heat vegetable oil in a large skillet over medium heat.

Take a spoonful of the potato mixture and flatten it into a pancake shape. Place it in the hot oil.

Fry the latkes for about 3-4 minutes on each side, or until they are golden brown and crispy.

Remove the latkes from the skillet and place them on a paper towel-lined plate to drain excess oil.
