Wild rice is not actually rice, but rather the seed of an aquatic grass native to North America.

This is vegetarian, gluten free and high protein recipe. Dish can be prepared in 70 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 14.

  1. In a large pot, cook wild rice according to package instructions. Drain and set aside.
  2. In the same pot, melt butter over medium heat. Add diced carrots, celery, onion, and minced garlic. Cook until vegetables are tender.
  3. Sprinkle flour over the vegetables and stir well to coat. Cook for an additional 2 minutes.
  4. Slowly pour in vegetable broth while stirring constantly. Add thyme, bay leaf, salt, and pepper.
  5. Bring the soup to a boil, then reduce heat and simmer for 20 minutes.
  6. Add cooked wild rice and milk to the pot. Stir well and simmer for another 10 minutes.
  7. Remove bay leaf and garnish with fresh parsley before serving.
