In a separate heatproof bowl, whisk the egg yolks. Slowly pour the hot cream mixture into the egg yolks, whisking constantly.

Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.

Remove the saucepan from heat and add the butterscotch chips, semi-sweet chocolate chips, vanilla extract, and salt. Stir until the chips are melted and the mixture is smooth.

Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl.

Divide the mixture evenly among four ramekins or small oven-safe dishes.

Place the ramekins in a baking dish and fill the dish with enough hot water to reach halfway up the sides of the ramekins.
