Core and peel the apples, then cut them into quarters.

In a skillet, melt the butter over medium heat. Add the brown sugar, cinnamon, and vanilla extract. Stir until the sugar is dissolved and the mixture is well combined.

Add the apple quarters to the skillet and cook for 5 minutes, stirring occasionally.

Roll out the puff pastry sheet on a lightly floured surface and cut into 6 equal squares.

Place an apple quarter in the center of each pastry square. Fold the corners of the pastry over the apple and pinch the edges to seal.
