  1. Preheat the oven to 180°C (350°F). Cut the butternut squash in half, remove the seeds and roast in the oven for 30 minutes or until soft.
  2. While the squash is roasting, rinse the bulgur wheat and drain well. Place it in a bowl and cover with boiling water. Let it sit for 15 minutes.
  3. In a pan, heat 1 tablespoon of olive oil and sauté the onion and garlic until softened. Add the cumin, coriander, and cinnamon and cook for another minute.
  4. Once the butternut squash is cooked, remove the flesh and mash it in a bowl. Add the bulgur wheat, sautéed onion mixture, mint leaves, and parsley. Season with salt and pepper.
  5. Mix well until all the ingredients are combined. Shape the mixture into small oval-shaped balls.
  6. Heat the remaining olive oil in a frying pan and fry the kibbeh until golden brown on all sides.
  7. In a separate bowl, crumble the feta cheese and mix in the chili flakes.
  8. Serve the butternut squash kibbeh with the spiced feta on top.
