Butterfly buns, also known as fairy cakes, are a popular treat in British baking. The name ‘butterfly’ comes from the way the top of the bun is cut and folded to resemble butterfly wings.

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs, one at a time, until well combined.
  4. Sift in the self-raising flour and fold into the mixture.
  5. Stir in the milk and vanilla extract until smooth.
  6. Spoon the mixture into a greased muffin tin, filling each cup halfway.
  7. Bake for 12-15 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let cool completely.
  9. Once cooled, cut a small circle from the top of each bun and set aside.
  10. Fill the cavity with a spoonful of jam.
  11. Replace the top of each bun to resemble butterfly wings.
  12. In a small bowl, mix together the icing sugar and water until smooth.
  13. Divide the icing into separate bowls and add food coloring, if desired.
  14. Drizzle the colored icing over the top of each bun to create butterfly patterns.
  15. Allow the icing to set before serving. Enjoy!
