Burst O’ Lemon Muffins

Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

In a separate bowl, whisk together the milk, vegetable oil, egg, lemon zest, and lemon juice.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Divide the batter evenly among the muffin cups, filling each about 2/3 full.

Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Remove from the oven and let the muffins cool in the tin for 5 minutes.

Transfer the muffins to a wire rack to cool completely.

Once cooled, dust the tops of the muffins with powdered sugar.
