Heat olive oil in a pot over medium heat. Add onion and garlic, sauté until translucent.

Add carrot, green bell pepper, and tomato. Cook for 5 minutes.

Add bulgur, vegetable broth, salt, black pepper, and ground cumin. Stir well.

Bring to a boil, then reduce heat to low and cover the pot. Simmer for 20 minutes.

Remove from heat and let it rest for 5 minutes.

Fluff the bulgur pilaf with a fork. Stir in parsley and lemon juice.
